Sourdough Bread

How to make YUMMY Sourdough bread- slightly sweet and very addicting.

First you need to create the actual starter. Combine:
1/2 cup sugar
3 T instant potato flakes
1 cup warm water
2 1/2 t instant dry yeast

Stir all this until well combined. Cover loosely (I use a napkin and rubberband). Leave on your counter overnight, then place in refrigerator for 3-5 days.

3-5 days later . . . FEED the starter.

1 cup warm water

Stir ingredients into starter, let sit on the counter all day. Mine sits on the counter, on my windowsill. Helps to have a small spider on the wall (Joking!).

This is how amazing I look, while stirring my starter (joking). Wow my counters were cluttered this day!


In the evening you have two choices- mix dough to make bread or give a cup of starter away. Alternately, if you don't have anyone to pass it too and it's been 5 days, you can throw a cup of it away. Either way, you want to remove one cup of the yeasty starter and put the rest in the fridge.

Combine the cup of starter that you removed with the following:

1/2 c sugar
1 T salt
1/2 cup canola or corn oil
1 1/2 cups warm water
6 cups flour

Stir until combined. Cover loosely with oiled plastic wrap and then put a lid or towel over the bowl (don't have to seal). You do want to use a LARGE mixing bowl for this, as it will rise to fill it by morning. Leave on the counter overnight.

In the morning, you have this great looking spongey!

Find a small child willing to help you punch it down. Then use your hands to roughly shape it and put it in two large bread pans (or three smaller). Cover with a towel and let sit for 6-12 hours, until risen! Bake at 350 for 30-35 minutes. Remove from pans to cool. Try not to eat it all at once!

And now you want a picture of the bread huh? Oops, can't find one! :) I bake tomorrow night, so I'll try to get one. The only negative to this bread is that you have to plan two days ahead to make sure it's ready! But it is SO good, makes the house smell better than any other bread I've made and makes awesome french toast! Enjoy! Let me know if you want a printable copy of the recipe.
